Many people have food allergies and food intolerance. It is very important to understand the differences because it could cost someone’s life if we are not careful. Food intolerance is rarely life threatening but food allergies sometimes are. Food allergies are very complex. Food allergy is a serious medical condition affecting up to 15 million people in the United States, including 1 in 13 children. When you work in dining services and are responsible for preparing and serving food to patients and residents it is important to be able to identify common food allergens and the foods that contain these allergens to keep our patients and residents safe.

Objectives
  • Understand the difference between a food allergy and food intolerance
  • List 5 of the nine foods that are identified as major food allergens
  • Understand the importance of avoiding the foods and beverages that contain an allergen and the potential consequences if this occurs

    Presenter: Kim Carr Fremont, MSED, RD, LD, Senior Vice President, Health Technologies, Inc.

    Kim has been involved in healthcare and long-term care for over 39 years and has experience in all aspects of nutritional care and food services in both long-term care and acute care settings. As the Senior Vice President of Health Technologies Kim is responsible for overseeing consulting services to over 1500 client facilities in 23 states, as well as hiring, training, and coordination the services of the 160 Health Technologies RD’s. Today’s healthcare facility must provide up to date nutritional care in a challenging environment while not sacrificing that home like touch and hospitality. Kim’s passions included training and education to assist our RD’s and clients in providing the very best in dining services. Kim’s background includes a Bachelor of Science in Medical Dietetics from the University of Illinois at the Medical Center, Chicago and a Master of Science in Education and Instructional Technology from Southern Illinois at Edwardsville. Memberships include The Academy of Nutrition and Dietetics including participation in the DHCC and Healthy Aging practice groups and the Missouri Dietetic Association.  Kim has worked with State ANFP chapters as well as participated and presented educational programs for numerous state professional organizations including the Illinois, Missouri, Kansas, and Maine Healthcare Associations. Kim served on the Illinois Healthcare Association Educational Committee for over 15 years. Kim has been a featured speaker at numerous local, state, and national healthcare conferences and authored numerous publications in use at HTI/DiningRD today. In her off time you will usually find Kim enjoying her passion for cooking for friends and family or enjoying time boating or skiing in the outdoors.
